Healthy Chocolate Cake
- 100g oats
- 125g grated sweet potato
- 2 eggs
- 120ml almond milk (any milk of your choice works)
- 1/2 large banana
- 25g unsweetened cocoa powder
- 25g apple sauce/apple baby food
- 25g avocado
- 2 TSP stevia
- 1/2 TSP baking powder
- 1 scoop of cappuccino whey protein for the topping (optional)
Blend oats, eggs and milk first. Add apple sauce, avocado and banana and continue blending. Add stevia, baking powder and cocoa powder until mixture looks creamy.
Add the mixture to the grated sweet potato and stir gently with a spoon. Bake at 200C for 30 minute.
Mix 1 scoop of Dymatize capuccino whey protein in a little bit of cold water to create a thick sauce and pour over cake once it has cooled down. Another option would be 1 pot (170g) of Total 0% Greek yogurt mixed with some coffee and stevia instead of the whey protein.
