Delicious and Nutritious Sweet Potato Pancakes – “TO DIE FOR”

Here at Bionic Bodies we know life can feel hectic, that’s why when the weekend rolls around we like to take a bit of extra time at breakfast to treat ourselves. Not every treat, however, has to conflict with a healthy lifestyle. These pancakes are made with no nasties and only use healthy ingredients! They’re super easy to whip up too, so your lazy Sunday can remain just that.

Equipment: Blender and frying pan

Ingredients (serves 2 to 3):

– 1 scoop of Bionic Bodies Lean Curves

– 100g liquid egg whites

– 1 whole egg

– 140g steamed/boiled sweet potato

– 120g oats

– 240g 0% Greek yogurt

– 1 TSP stevia for extra sweetness (optional)

– 1 TSP cinnamon/nutmeg/allspice (optional)

– Coconut oil for frying

Method:

Add egg whites, whole egg, milk and Bionic Bodies Lean Curves and blend until smooth. Add sweet potatoes and yogurt and blend again. Finally add oats plus optional ingredients and blend well.

In your frying pan, medium heat melt a knob of coconut oil. Pour your batter into the pan and cook until golden on each side. These pancakes are quite delicate so make sure they are cooked properly on one side before turning them to the other side.

Optional extra ingredients include: raisins, chocolate chips, blueberries, dedicated coconut, or chopped nuts. Add any spices when combining your ingredients in the blender. Add the other extras once you have flipped your pancakes. That way they will stick into your pancake without being overcooked. You can also try experimenting with toasted nuts.
