Oaty Banana and Peanut Butter Protein Muffins
There’s something very satisfying about a coffee accompanied by a muffin. Trouble is, muffins are loaded with calories contributing┬áto those extra pounds of body fat. Now that those wintery days are here to stay, what about embracing the cold season and welcome it with these magnificent but healthy mini muffins?
Now we can enjoy that coffee/tea time with a little piece of heaven all guilt free. And the best of all is, they are made of natural ingredients and they can be made gluten free if you wish. Try it to believe it!
Ingredients:
-2 medium ripe bananas
-2 eggs
-25g quick oats (or gluten free oats if desired)
-15g coconut flour
-45g peanut butter
-40g honey
-1 tsp vanilla extract
-1 tsp baking powder
-50g dark choc chips or 50g raisins (optional).
A delicious combo would be mixing 1 TSP cinnamon and 50g of raisins.
Method:
In a bowl mash the 2 bananas. In a separate bowl beat eggs well and add to the mashed bananas and whisk. Add the rest of the ingredients and whisk well. Mix in either dark choc chips or raisins.
Preheat oven to 180 degrees. Coat mini muffin tray with coconut oil and spoon mixture on each hole. Bake for 25min. Allow mini muffins to cool down before removing them from tray.
Enjoy!!!! Makes 24 mini muffins.
